I’m excited to share this Whipped Strawberry Butter recipe with you, just in time for any Easter brunch celebrations you may be having this weekend.
With only 4 ingredients, you’ll wonder why you’ve never made your own homemade whipped butter before. And you may find yourself continuing to make it for non-holidays, too. In fact, you may find yourself whipping up my Honey Butter during the Fall. So incredibly delicious on piping hot dinner rolls.
But for now, it’s back to strawberry butter; it too is so easy and so delicious that you won’t even need to add syrup to your waffles so technically, it’s healthy!
- 1 1/2 cups fresh strawberries, rinsed, hulled and finely chopped
- 2 tablespoons sugar
- 1/2 tablespoon fresh lemon juice
- 1 stick unsalted butter, softened
Place the strawberries with the sugar and lemon juice in a medium saucepan over medium heat. Bring the mixture to a boil, then lower the heat. Allow the strawberries to simmer for 10 minutes.
Allow the strawberry mixture to cool.
In the bowl of a stand mixer, whip the softened butter until pale and fluffy. Add the cooled strawberry mixture to the butter and whip until well combined.
The recipe was created for inRegister as part of a special “Strawberry Bliss” feature promoting our state’s very own Strawberry Festival.
Top your favorite waffle recipe with some Whipped Strawberry Butter, some extra sliced strawberries and a sprinkle of powdered sugar for a breakfast that is oh, so berry delicious.
Feeling super adventurous? Create a berry breakfast platter filled with strawberries, blueberries and blackberries! Or, fill it with whatever fruit is your favorite.
If I were ever to run a Bed & Breakfast, this is what I imagine I’d serve. Tons of fresh fruit paired with homemade deliciousness served up beautifully! And yes, sometimes I think that’s my dream calling. Buying, renovating and running a Bed & Breakfast. For now, though, I just foster dogs, serve them homemade doggie treats and call my home a Bed & Biscuit instead.
I hope you have the most wonderful Easter weekend surrounded by those you love filled with joy, peace and hope.
I’d be remiss without sharing even more strawberry recipes with you:
