It’s hard to believe that it’s already the middle of October! Holy cow where did September go??? With just 2 weeks until Halloween, I thought I’d better hurry up and share a quick cocktail with you! These Very Scary Strawberry Daiquiris are incredibly easy to make and the fun eyeball garnishes keep things spooky.
Last year was our first Halloween in our new home and I sort of went a bit overboard. This year, with cookbook deadlines looming, I only recently got around to putting out some pumpkins. I wasn’t going to do anything, actually but one by one, witches and skeletons started appearing on all the neighborhood porches. I pulled up last year’s Halloween post and was so disappointed in myself that I grabbed a 4 foot tall witch from Home Goods, stuck her next to my porch bench, and called it a day. I take that back. I purchased her, then decided she needed to light up, so added some orange lights to her, then called it a day.
Our neighborhood is a pleasant mixture of young families, older couples, and non-children preferred professionals….totaling no more than 80 homes. Halloween around here was interesting last year because if we had 10 trick or treaters, that was about it. Since that time, however, a few more families have moved in so this year might be a bit more action but regardless, our back corner of the subdivision will be found sitting on our porches, handing out candy….. with wine or cocktails in hand. In fact, long after the handful of ghosts and goblins had passed last year we had just as many adults congregated on one porch continuing to polish off all the wine and snacks.
To keep things festive, these Very Scary Strawberry Daiquiris can be whipped up in no time. They’re a much lighter version of a traditional Strawberry Daiquiri, because let’s face it, you’re probably going to be snacking on candy and could use a lighter drink. Instead of drinking all of your calories, puree 1 cup of strawberries in a blender with 1 oz. light rum and a handful of ice cubes and a sprinkle of Sweet’N Low zero calorie sweetener. Repeat for each serving.
To make the eyeball garnishes (I’ve seen it done lots of different ways), I simply used a melon baller to carve out a rounded mozzarella ball, added some red gel icing and a sliced olive. Slide them onto a cocktail skewer and you’re all set! The mozzarella doesn’t necessarily “go” with the daiquiris but I needed a red drink and since it’s still a bit warm here, the strawberries were the answer to my coordination dilemma.
