Hey y’all, hey!
Today I had a whopping 5 seconds of fame on the Rachael Ray Show talking about my Saintsational Spicy Crawfish & Corn Dip!
I have no earthly idea why I’m standing with my hands on my hips like that, all assertively. I think I was trying to make sure you knew I was wearing an apron and not a dress? I’m really not sure but I look ridiculous. (sigh)
And then later they showed me stirring my dip….and not looking very happy.
But I was very, very happy because I was making my favorite Spicy Crawfish & Corn Dip and the crawfish were coming to a boil and making my kitchen smell oh so delicious. At this moment, however, I think I added ingredients out of order and was thinking to myself “you’re on camera and there’s no removing the corn if the corn shouldn’t have gone in right then, and besides, who cares when the corn goes in as long as it gets in there. It’s just corn, probably doesn’t matter when you add it”.
That’s what goes through my head, friends.
I was also happy, though, because when the instructions for the video said “we want to see you and your kitchen decked in team spirit” I knew I’d need to whip up an apron. If you watched, or will watch the segment, of all the teams represented I’m just about the ONLY one that doesn’t look like a crazy super fan.
It’s probably why I didn’t make it into the final 4 cook off and onto the show (the winner was wearing a tutu) but that’s ok, I will always remain true to myself….regardless if it involves winning Super Bowl tickets and a trip to compete on the Rachael Ray Show.
I think it also had to do with the fact that the Saints have been long out of the playoffs and the final 4 were still contenders at the time of filming. My team? Not so much.
Even though my portion was literally 5 seconds long and they edited out my name and hometown, it was still an honor to be contacted by the show and given the opportunity to represent my state and the New Orleans Saints on national television.
And to be recognized for my fierce homegating skills!
I’m going to work on editing the video and post it here so you get to see me actually making the dip, but here’s what it looks like once it’s all complete.
So insanely good!
I even say in the video, “it may not win you any games but it will definitely win over your hungry crowd” and it will. It’s a game day favorite and ridiculously easy to throw together.
Spicy Crawfish & Corn Dip
- ½ cup butter 1 stick
- 1 cup green onions chopped
- 1 small green bell pepper diced
- 1 1-lb. package frozen cooked, peeled crawfish tails, thawed and undrained
- 1 cup sweet corn drained
- 2 garlic cloves minced
- 1 4-oz. jar diced pimiento, drained
- 2-3 teaspoons Creole seasoning
- 1 tablespoon Tabasco sauce
- 1 8-oz. package cream cheese, softened
- Melt the butter in a Dutch oven over medium heat; add green onions and bell pepper. Cook, until the bell pepper is tender- about 8 minutes or so; stirring occasionally. Once tender, add the crawfish, corn, garlic, pimiento, seasoning and hot sauce. Continue to cook about 10 minutes and reduce heat to low. Stir in the cream cheese until mixture is smooth and bubbly.
- Serve with toasted baguettes, French bread slices, etc.
