This Semi-Homemade 20 Minute Basil Pesto Pasta with Chicken is just what the doctor ordered when you need a quick meal in literally minutes.
We are getting ready to embark on an Alaskan cruise with my husband’s family and because I spent some time grocery shopping and baking a few things for my pet/house sitter, I was completely out of steam when it came to dinner for ourselves.
Last week I mentioned that I was working with Sprouts Farmer’s Market to promote their grand opening here in Baton Rouge. They graciously sent a box full of private label goodies to provide a “taste” of what is to come in the new store and boy am I ever so thankful.
Inside my goodie box there was Organic Popcorn, Peanut Butter Puffs and Chocolate Flavored Coconut Rolls. There was even a bath bomb and some facial cleansing wipes from their Vitamins and Body Care department. Those makeup remover wipes went promptly into my suitcase!
The highlight, though, and what saved my sanity was the Organic Fuseli pasta and a jar of Basil Pesto. I knew that with the addition of some seasoned baked chicken, I’d have a healthy dinner in a matter of moments keeping us from ordering pizza or heading towards the dreaded drive-through.
This little jar of happiness is indicative of the type of items you’ll find once inside. The Sprouts Brand offers a wide selection of natural and organic products, as well as gluten-free, vegan and non-GMO varieties. 1 jar pesto + 1 bag of pasta + minimal ingredient baked, juicy Lucy chicken and dinner time done!
- 1 refrigerated pie crust (or homemade)
- 3 apples, cored sliced and peeled
- 1/4 cup caramel sauce (or 1/4 cup melted caramel candies)
- 1/4 cup butter
- 3/4 cup sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 teaspoon salt
- 3/4 cup chopped pecans
Preheat oven to 400 degrees. Fit piecrust into a 9-inch pie plate. Prick bottom and sides of piecrust with a fork. Bake at 400 degrees for 6- 8 minutes until lightly browned; cool on wire rack.
Combine caramel sauce and butter in a large saucepan over medium heat. Cool, stirring constantly until butter is melted and completely combined. Remove from heat.
Stir together sugar, eggs, vanilla extract and salt; pour into caramel mixture blending thoroughly. Stir in pecans and pour into prepared pie crust. Arrange the sliced apples on top of the pecan mixture.
Bake pie at 400 degrees for 10 minutes. Reduce heat to 350 and bake 30-40 more minutes, shielding edges of crust with aluminum foil or a pie shield to prevent excessive browning if necessary. Bake until apples are tender and pie is bubbly. Allow to cool on a wire rack for at least 10 minutes to fully set. Serve warm.
