This Semi-Homemade 20 Minute Basil Pesto Pasta with Chicken is just what the doctor ordered when you need a quick meal in literally minutes.
We are getting ready to embark on an Alaskan cruise with my husband’s family and because I spent some time grocery shopping and baking a few things for my pet/house sitter, I was completely out of steam when it came to dinner for ourselves.
Last week I mentioned that I was working with Sprouts Farmer’s Market to promote their grand opening here in Baton Rouge. They graciously sent a box full of private label goodies to provide a “taste” of what is to come in the new store and boy am I ever so thankful.
Inside my goodie box there was Organic Popcorn, Peanut Butter Puffs and Chocolate Flavored Coconut Rolls. There was even a bath bomb and some facial cleansing wipes from their Vitamins and Body Care department. Those makeup remover wipes went promptly into my suitcase!
The highlight, though, and what saved my sanity was the Organic Fuseli pasta and a jar of Basil Pesto. I knew that with the addition of some seasoned baked chicken, I’d have a healthy dinner in a matter of moments keeping us from ordering pizza or heading towards the dreaded drive-through.
This little jar of happiness is indicative of the type of items you’ll find once inside. The Sprouts Brand offers a wide selection of natural and organic products, as well as gluten-free, vegan and non-GMO varieties. 1 jar pesto + 1 bag of pasta + minimal ingredient baked, juicy Lucy chicken and dinner time done!
- 1- 6.7 ounce Sprouts Organic Basil Pesto
- 1- 16 ounce Sprouts Organic Fusilli Pasta
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Preheat the oven to 450 degrees and line a baking sheet with aluminum foil. Spray the foil lightly with non-stick cooking spray.
In a small bowl, combine the seasoning ingredients.
Rub each chicken breast with olive oil, place on baking sheet, and evenly coat both sides of the chicken with the seasoning.
Bake (depending on size and thickness of breasts) for 16-19 minutes or until the internal temperature reaches 165 degrees. *My chicken breasts were about 8 ounces each.
Remove the pan and allow the chicken to rest for about 5 minutes before slicing.
Prepare the pasta according to package instructions; drain.
Combine the cooked pasta with the jar of basil pesto. Top with sliced chicken. Garnish with additional chopped fresh basil if desired. Serve warm.
