I know I said I was waiting until next week to officially welcome Fall, but these Pumpkin Pie Spice Mini Donuts happened and now I’m in full fledged bring on all the Fall decorating & pumpkin things!
I’m not sure there’s anything cuter than a bite sized donut that can fit around a straw! Made with the mini donut maker pan from Wilton, the recipe will make like 48 donuts. You most certainly do not need to make all 48. I made 24 mini donuts and 12 baby bundt cakes with my spice cake batter.
But before we get to the recipe for the donuts, I feel like I should mention a little more about my monthly recipes with International Delight. Maybe you’ve noticed that they’ve been monthly, maybe you haven’t, or maybe you have noticed and haven’t cared but a few months ago I joined their team as an ambassador. I LOVE coffee creamer and the seasonal flavors are absolutely my favorite. Agreeing to recipe develop or simply talk about the creamer once a month was an easy yes in my book. However, if you’re not familiar with blogging and how the brand ambassadorships that can come along with it work, it may have seemed like all of a sudden I was talking a lot about coffee.
My hope was that it would never feel like a commercial and I’ve tried really hard to come up with creative uses for the creamer rather than simply putting it into your coffee and talking about that each month. Believe me, I could talk monthly about the fact that without my daily 10 minutes of morning time quiet, I would be a basket case. Just ask my husband what happens when I’m out of creamer. It’s not pretty.
But you don’t come here to read about how crazy I am without my coffee. No, no, I believe that you come here to get easy recipes and creative ideas for entertaining with them. Or, at least, that’s why I hope you come to visit. If you are here for the crazy coffee stories then I should probably start sharing more of those.
I never want you to feel like I’m trying to sell you something.
Except for these darn mini donuts.
If you don’t do anything I ever tell you to do, you should really consider making these Pumpkin Pie Spice mini donuts. When I say their teeny tiny size makes them all the more irresistible, I am not joking around. I had 4 just trying to get through photographing them.
To get started, you’re going to need to grab a box of Spice cake mix. I think it was Duncan Hines but I could be wrong. Whip that together and bake your donuts in the mini donut pan according to the directions on the donut pan. They only bake for 5 minutes.
You’re going to also need to get yourself some Pumpkin Pie Spice creamer.
And by encouraging you to purchase the creamer, I’m actually doing you a favor. Do you KNOW how much you spend on Pumpkin Spice lattes? Does your husband know? I won’t tell him, but I will kindly remind you that you can get similar results at home.
Enough of that….
While your donuts are cooling, make the Pumpkin Pie Spice glaze to go on top of your muffins. The glaze is where it’s at!
Pumpkin Pie Spice Mini Donut Glaze
- 1 1/2 cup sifted powdered sugar
- 1/2 tsp vanilla extract
- 1 1/2 tablespoon International Delight creamer (Pumpkin Pie Spice flavored)
- 1/4 teaspoon pumpkin spice (see homemade version in archives)
- Combine the powdered sugar, vanilla, creamer & spice in a small bowl, whisking until smooth. Glaze should be thick but free flowing. Place in a piping bag or ziplock bag for easier control. Glaze will cover 24 mini donuts.
I got a little confused whether or not to neatly ice my donuts or to drizzle so I did both. I even dipped some in brown sugar but those of the ones I accidentally ate before photographing. Just try to visualize them, okay.
So, now in a matter of 30 minutes you have yourself a very pumpkin, oh so adorable morning time treat that couldn’t be easier!
